Snow Ice Cream

We made Snow Ice Cream from all the snow we received today! I LOVE Snow Ice Cream and don't get the chance to make it that often.

I used Paula Deen's recipe:
8 Cups Fresh Snow
1 Can of Sweetened Condensed Milk
1 Teaspoon of Vanilla Extract

Mix all and serve immediately!
SOOO GOOD!

Four Christmases

Uggggggggghhhhhhhh!!!!!!!! For some reason, I have had to type and re-type this post. So, instead of trying again, I am just going to show pics of Christmas with little explanation. Here they are, in no particular order:
My dad and brother
Rhett test driving one of the FOUR motorized vehicles he got.
My other brother, dad and mom.Rhett wearing some new construction gear he got.

Taking his jeep for a spin.

Rhett opening presents at Mawmaw's house

He got a motorcycle! And Luke got a 4-wheeler

Opening the motorcycle (told you they are out of order)

More presents

Checking out his Jeep from Santa

He seemed to like this gift

Santa came!

A snowman cheeseball I made using store-bought cheeseballs, cream cheese, black olives, a baby carrot and a red bell pepper. Wish I had something creative for a hat for him.

Chocolate wreath I copied from here.
We had a white Christmas! It was the first in like 80 years! So cool!

Hope you all had a magical Christmas and got everything you wished for!

Ummm, WOW!

I recently ran across this recipe for Apple Dumplings. From the looks of the pictures, I knew I HAD to try them for myself. So, last night, I did precisely that. I try to take my inlaws one meal a week to lighten their load a little (that is my intent anyway). So, I decided this week to also take a dessert. Boy, was it delish!!!!!!!!!!!!!!!!!! Unlike the original recipe, I didn't add the nuts because I don't like them and my MIL can't eat them right now. I also didn't add the caramel sauce because I forgot to buy it :(. We didn't serve it over ice cream either because my MIL can't have cold things right now either. Despite all of that, they were still soooo good. Even my husband (who normally only likes chocolate and rarely wants any other kind of dessert) ate two! I highly recommend you make these for yourselves! I am thinking of making a whole bunch and taking them to Thanksgiving dinner. They kind of remind me of fall. And if you'll notice, the recipe makes eight, there are only seven in my picture. That is because I couldn't wait to taste them until after the picture! :)

Yummy!

You all HAVE to try out this recipe for yourselves. I found it on Delightful Home and knew when I saw it that I had to make it. I served it with grilled corn on the cob last night and also used it as a sandwich spread on my club sandwich for lunch today.

Spicy Lime Butter

  • 1/2 cup of butter, softened

  • 1/2 teaspoon lime zest (finely shredded)

  • juice squeezed from half a lime

  • 1/4 teaspoon sea salt or kosher salt

  • 1/8 teaspoon cayenne pepper or freshly ground black pepper

  • 1/8 teaspoon bottled hot pepper sauce(Tabasco- for those Texans reading this). (I honestly didn't know what hot pepper sauce was- ha!)

Mix together thoroughly. I mixed mine in a mixer and chilled it before serving. It was delish! Even my hubby (whom is very picky and reluctant to try new things) liked it!

Also, I didn't try the cayenne pepper. I was too chicken. But, I am sure that it would be just as good. I just don't like hot stuff. It was such a great, easy summertime recipe.

And while I'm on the subject of limes, I'd like to introduce you all to my FAVORITE candle scent of all time: Limelight by Tyler Candle Company. It is from the great state of Texas, y'all ;)! It is the most wonderful, light, refreshing scent ever! It reminds me of summer. Even the jar is pretty!
So, if you're in the mood for summer, try out both these great lime products! I promise, you won't be disappointed.

Oh the weather outside is frightful...

It iced over last night at our house, so this morning I really didn't see a reason to get out or to get Rhett out in the stuff. So, I thought I would mess around in the kitchen. I decided to make some yummy homemade bread and some homemade Wassail. Recipes courtesy of my friend, Betsy, and my Grandmother, respectively. Below are the recipes in case you are ever iced in. As an added bonus, both of these recipes will make your house smell delish!
Traditional White Bread

6-7 cups all-purpose flour
3 tablespoons sugar
1 tablespoon salt
2 tablespoons shortening
2 packages yeast
2 1/4 cups very warm water (120-130 degrees)
2 tablespoons butter, melted, if desired

1. Mix 3 1/2 cups of the flour, the sugar, salt, shortening, and yeast in large bowl. Add warm water. Beat with electric mixer on low speed 1 minute, scarping bowl frequently. Beat on medium speed 1 minute, scraping bowl frequently. Stir in enough remaining flour, 1 cup at a time, to make dough easy to handle.

2. Place dough on lightly floured surface. Knead about 10 minutes or until dough is smooth and springy. Place dough in large bowl greased with shortening, turning dough to grease all sides. Cover bowl loosely with plastic wrap and let rise in warm place 40 to 60 minutes or until double. Dough is ready if indentation remains when touched.

3. Grease bottoms and sides of 2 loaf pans, 8 1/2 x 4 1/2 or 9 x 5, with shortening.

4. Gently push fist into dough to deflate. Divide dough in half. Flatten each half with hands or rolling pin into 18 x 9 inch rectangle on lightly floured surface. Roll dough up tightly, beginning at 9-inch side. Press with thumbs to seal after every turn. Pinch edge of dough into roll to seal. Press each end with side of hand to seal. Fold ends under loaf. Place seam side down in pan. Brush loaves lightly with butter. Cover loosely with plastic wrap and let rise in warm place 35 to 50 minutes or until double.

5. Move oven rack to low position so that tops of pans will be in center of oven. Heat oven to 425 degrees.

6. Bake 25 to 30 minutes or until loaves are a deep golden brown and sound hollow when tapped. Remove from pans to wire rack. Brush loaves with butter, cool.

Grandmother V's Homemade Wassail

1 gal. Apple Juice
1 cup water
5-6 cinnamon sticks
1 whole orange
whole cloves

Pierce the outside of the orange with the whole cloves, covering generously. Add all ingredients in large stockpot and simmer over low to medium heat.

Enjoy!

(I didn't have any oranges, but have also seen this recipe w/ lemons. I prefer oranges, but it is still pretty good with both!)
